This is my go-to chicken marinade for the best, juiciest chicken. My weeks are busy and this makes dinner fast, delicious and healthy.
Let me start by saying, buy high-quality chicken. Don't go for cheap chicken, because that's a sign that the chicken is of poor quality. My favorite brand of chicken is Bell & Evans, but most organic air chilled chicken will be better quality. If that is out of your budget, try to go for locally sourced chicken, places like farmers markets or co-ops would have this, and even local butchers.
OK, now for the marinade. You will need:
- Fresh garlic
- lemons
- olive oil
- salt & pepper
This is a great quick marinade that you can throw together in minutes and let sit on your chicken for an hour or more, and have tasty chicken that can pair with almost any side dish, salad or dish.
I love to make this marinade for my frozen chicken bags that I keep in my freezer at all times. nothing is easier than pulling a bag of frozen marinated chicken out in the morning and grilling it up for dinner. You have a healthy, high-protein meal in minutes.
📖 Recipe
Lemon Garlic Marinade
Ingredients
- ¼ cup Olive Oil Extra Virgin
- 1 Juice of one lemon
- 1 teaspoon Zest of lemon
- 3 teaspoon pressed or minced garlic about 3 medium cloves
- Salt + Pepper to taste
- 1 tbsp Raw Honey optional but I recommend it!
Instructions
- In a liquid measuring cup, measure ¼ cup of olive oil. Add garlic, lemon juice, lemon zest, salt and pepper and honey if using.
- Mix well and use right away over chicken (or turkey or pork). I like to massage the marinade into the meat for a couple of minutes. Place meat & marinade back into the refrigerator and let marinade for at least one hour or up until overnight. You can also freeze meat with the marinade in freezer safe container.
